This courgette cake is so tasty and totally beats carrot cake every time. Got this recipes at random recipe from my Mum and don’t know where she got it. It forms a sort of sugary crunchy top and is moist in the middle. I usually make it in a loaf tin.
1 1/2 cups caster sugar
heaped 1/4 teaspoon salt
2/3 cup oil
1/4 teaspoon baking powder
2 teaspoon cinnamon
1 1/3 cup plain flour
2 teaspoons vanilla
1 1/3 cups grated courgette/zucchini
2/3 teaspoons baking soda
nuts/raisins/seeds as you like it
- Beat eggs until fluffy.
- Add sugar, oil & vanilla, beat.
- Stir in other ingredients (salt, baking powder, cinnamon, flour, courgette/zucchini, baking soda, etc.).
- Pour into a prepared loaf tin
- Bake at 180oC for 1 hour (160 in a fan oven).
